Very much like the throw in, the goal kick is a method of getting play restarted after the ball has crossed the line and allowed play to stop. When the defending team allows the ball to leave the field without a goal being scored, the last team to have touched the ball is awarded the goal kick.
For a goal kick, the ball is placed on the ground in the goal area. The rest of the team has to back off and allow the ball to be kicked, until which time they are not allowed to enter the goal area at all. A goal kick is taken place with no players around and the game cannot start until the ball is in play from it having been kicked. If somebody touches the ball that is not the kicker before the ball is in play, then the goal kick must be redone but that is a minor offense that can result in an unobstructed free kick, and that is something that nobody wants to have to deal with. Free kicks can result in extra points, and no team wants to have extra points on the other team.
