Mathis Olimb is a Norwegian winger on Frolunda HC.

Olimb played a number of seasons in Norwegian professional leagues, beginning in 2002. In 2004, he moved to North America, where he split a season in the OHL between the London Knights, and the Sarnia Sting, finishing with 33 points. He returned to Norway the following season, and scored a career high 63 points in 2006-07. He then spent two years playing in the German professional leagues, with the Augsburger Panthers. He signed with Frolunda in 2009.

Olimb has played for Norway at every major international tournament they have been involved in since 2002, including the 2007 and 2008 World Championships.
